I've never made guacamole with jalapenos before, and I really liked it. In fact, I'd probably use extra next time for more of a bite. The only thing I noticed about this recipe was a teaspoon of salt was too salty (only an opinion). It gave me an excuse to throw in an extra avocado and make a little more guacamole. I still didn't have leftovers so you might want to double or triple it. This recipe came from Country Living. Serving size is estimated because it wasn't listed. Ingredients:
2 avocados (ripe, peeled, and pitted) |
1 lime (medium and juiced) |
1/4 cup red onion (finely chopped) |
2 tablespoons cilantro, chopped |
1 garlic clove (finely chopped) |
1 teaspoon kosher salt |
1/2 teaspoon black pepper |
1 tablespoon jalapeno pepper (finely chopped) |
Directions:
1. Place the avocados and lime in a medium bowl and lightly mash with a fork. 2. Stir in the remaining ingredients. 3. Serve immediately or cover and chill for up to 3 hours. |
