Unbelievably Delicious! Ingredients:
1/4 c oil |
2 c onion, chopped |
1/4 c butter |
8 oz sour cream |
1 c cheddar cheese, shredded, divided |
1 1/2 c self-rising cornmeal |
1 tbsp sugar |
1/4 tsp dill |
2 eggs, beaten |
1 can (8 oz) cream style corn |
1/4 c milk |
dash of hot sauce |
cast iron skillet |
Directions:
1. Put oil in skillet and place in oven while preheating to 375 degrees. 2. Sauté onions in another skillet in margarine until tender then let cool. 3. Stir sour cream and 1/2 cup of cheese in onion mixture. Set aside. 4. In separate bowl, mix remaining ingredients together. 5. Remove skillet from oven and pour hot oil into cornmeal batter and stir until well blended. 6. Spoon batter into hot skillet. 7. Spread sour cream mixture on top of cornmeal. 8. Sprinkle with remaining cheese. 9. Bake for 35 - 40 minutes or until done. |
