The Ultimate Chicken Salad

Make it a day ahead; chunky chicken and fruit with a great dressing
Ingredients:
2 quarts cooked white chicken, coarsely cut (6 whole breasts)
2 lbs seedless grapes, red or green
2 cups chopped celery
1/4 cup green onions, thinly sliced
2 cups mayonnaise
1 tbs curry powder
2 tbs chopped chutney
2 (6 oz) cans water chestnuts, drained and sliced
2 tbs soy sauce
1 (20 oz) can pineapple chunks, drained well
2 tbs lemon juice, optional
1 cup slivered almonds, toasted
Directions:
1. Combine all ingredients, except almonds; chill overnight
2. Sprinkle toasted almonds on top of chicken salad before serving.
3. If you like, serve on lettuce; garnish with wedges of your favorite melon
4. Makes 12 main dish servings
