The Ultimate Chicken Salad |

Make it a day ahead; chunky chicken and fruit with a great dressing Ingredients:
2 quarts cooked white chicken, coarsely cut (6 whole breasts) |
2 lbs seedless grapes, red or green |
2 cups chopped celery |
1/4 cup green onions, thinly sliced |
2 cups mayonnaise |
1 tbs curry powder |
2 tbs chopped chutney |
2 (6 oz) cans water chestnuts, drained and sliced |
2 tbs soy sauce |
1 (20 oz) can pineapple chunks, drained well |
2 tbs lemon juice, optional |
1 cup slivered almonds, toasted |
Directions:
1. Combine all ingredients, except almonds; chill overnight 2. Sprinkle toasted almonds on top of chicken salad before serving. 3. If you like, serve on lettuce; garnish with wedges of your favorite melon 4. Makes 12 main dish servings |
