The Spirit Of Apple Prune Pancake |

I cut the apple in half and fell in love with the 'Spirit' of it's core. I appreciate food more when I tune into the heart of it. Enjoy :) Ingredients:
filling |
boiled rosehip tea herbs (save the herb contents from your cuppa) |
1/2 apple cut into quarter slices |
1/2 cup water |
4 pitted soft prunes |
pancake |
1 egg beaten |
1/2 cup soy drink |
approx 1/2 cup gluten free sr flour (lighter, fluffier and healthier than wheat flour) |
1/2 tablespoon peanut oil |
Directions:
1. FILLING 2. Stew apple and prunes until apples are semi soft (3 mins) 3. 3 tablespoons fruity berry soy yogurt (or your choice) 4. PANCAKE 5. Pour mixture into hot frying pan 6. Put lid on so top gets firm bubbles and is half cooked. 7. Turn pancake over after bottom is golden brown 3 mins 8. Cook for a further 2 minutes. 9. Place the fruit filling onto the whole pancake. 10. Place the yogurt onto 1/2 of the pancake. 11. Fold in half. 12. Sprinkle icing sugar on top and serve. Enjoy:) |
