I have been searching for a recipe to duplicate what my mother made when I was a kid. She couldn't remember what recipe she used, so I had to make a lot of zucchini bread!! Until I found this one!! The search is over! Moist, tasty and memories of childhood! The missing ingredient all this time was Dark Brown Sugar!!! Ingredients:
3 eggs, well beaten |
1 cup sugar |
2/3 cup dark brown sugar |
3/4 cup salad oil |
2 teaspoons vanilla |
3 cups zucchini, shredded |
3 cups flour |
1 1/2 teaspoons baking powder |
1 teaspoon baking soda |
1 teaspoon salt |
3 teaspoons cinnamon |
Directions:
1. Preheat 350 degree oven. 2. Combine first five ingredients in large mixing bowl. Mix well. Stir in rest of ingredients blend well. Pour into two greased 9 inch bread pans. Bake for 60 -70 minutes or till done. |
