The Sea Hag's French Silk Pie |

We visited The Sea Hag restaurant on our honeymoon and bought their recipe book (because their chowder was AMAZING). I've been making their french silk pie ever since! Ingredients:
1 cup sugar |
1 cup unsalted butter, room temperature (no exceptions) |
3 ounces chocolate (unsweetened baker's) |
4 eggs |
1 pie crust (cookie crumb variety) |
Directions:
1. In a double boiler, start melting the chocolate. When it's melted, take it off the boiler and let it cool. 2. Cream the butter and sugar with a mixer for about 2 minutes. 3. Add 2 eggs, mix on high for 2 minutes. It's important to mix for the ENTIRE two minutes. 4. Add cooled chocolate and mix until combined. 5. Add the last two eggs and mix on high for another 2 minutes. 6. Scoop into the pie crust and freeze for an hour. |
