This recipe has been in our family forever. The tortillas separate during baking and that's what makes this special. Ingredients:
6 flour tortillas |
5 ounces shredded jalapeno jack cheese |
1/2 lb bacon, diced &, fried crisp |
1/2 cup chopped green pepper |
1 (2 7/8 ounce) can french fried onion rings |
chopped jalapeno (to your taste) |
4 eggs |
2 cups milk |
1/2 teaspoon chili powder |
1/4 teaspoon dried mustard |
Directions:
1. Line pie pan with tortillas. 2. Sprinkle cheese, bacon, peppers and 3/4 of onions over tortillas. 3. Beat eggs, milk, chili powder and mustard together. 4. Pour over ingredients in pan. 5. Sprinkle with remaining onions. 6. Bake at 350° for 20-25 minutes. 7. Cool 5 minutes before cutting. |
