This is a tzatziki recipe of a friend from Kefalonia in Greece. It's so simple- kids can help make it! So next time you see it at Costco, keep walking. Now you have an authentic recipe of your own! This sauce can be used as a mezze (Greek: appetizer) for dipping bread, or with meats, poultry, kefta- ANYTHING! Additionally, one more alternative of this recipe is to ommit the dill and oregano, and add about 1 Tbsp of freshly chopped mint. Very refreshing with The Parker's Tandoori Chicken recipe.
Ingredients:
1 (5 1/3 ounce) greek yogurt (whole foods carries it, as well as most major-chain grocery stores, just ask. as a last resort, use)
2/3 cup cucumber
1 tablespoon fresh lemon juice
1 teaspoon salt
1 teaspoon garlic, minced
1 tablespoon extra virgin olive oil
1/2 teaspoon dill
1/2 teaspoon oregano
Directions:
1. Cut cucumber in half and spoon out the seeds. Take a grater, or shredder (whatever you have) and grate the cucumber. If you don't have either, give it a small dice.
2. Squeeze all the excess water out of the cucumber, using paper towels or dish towels. Srinkle the salt over the cucumber to further dehydrate it.
3. Finally, mix all the ingredients together and refrigerate. Can be made several hours ahead, or even a day.
