The Original Chorizo Egg Burrito |

For those who like the meat-based chorizo. If you prefer the soy-based chorizo, check out my other recipe for that style. Their all good & satisfying. Ingredients:
pork or beef chorizo |
3 large eggs |
shredded cheddar cheese |
optional ingredients |
sour cream |
beans- whole or refried (heated) |
mushrooms |
sweet or hot peppers |
olives |
Directions:
1. Heat frying pan to a medium-high temperature 2. Chop optional ingredients you want to add. 3. Squeeze about 2 -3 of chorizo into hot pan, stirring so it cooks evenly. 4. Move chorizo to the side of the pan, then press all the grease out of it with the back of your spoon or spatula. You'll have to do this a couple of times to get most of it out. 5. Then you put it on a paper plate (you can toss it out when done), and soak the rest of the grease with a paper towel till it's dry. 6. Return chorizo to hot pan and add eggs & shredded cheese & any optional ingredients (exept beans). Stir till blended and cooked the way you like 'em done. 7. Heat tortillas in the microwave. 8. Divide eggs evenly and place on tortilla with your optional ingredients. 9. Roll up and serve. 10. (if you need to eat on the run, put burrito in a plastic sandwich bag so it doesn't drip all over your nice clean clothes- or the baby- or your newspaper) |
