The original recipe made popular at Benedict's Restaurant at the turn of the century in Louisville. If you like cucumbers (and my wife REALLY likes them) then this is the recipe for you. Ingredients:
1 large cucumber |
8 ounces cream cheese, softened |
2 tablespoons onion, grated |
1/4 teaspoon salt |
1 dash green food coloring, optional |
Directions:
1. Grate and drain cucumber. Combine with remaining ingredients in a food processor. |
