This recipe comes from the Abs-diet book. I have no idea why it has the name that it does. The only change that I have made is to increase to four servings instead of the one serving that the book has. Ingredients:
2 tbs. olive oil |
1 tsp. red pepper flakes |
1 lb. boneless, skinless chicken breasts cut into small pieces |
1 1/3 c. matchstick carrots ( i usually do 3-4 medium) |
1 1/3 c. thinly chopped celery (about 2-3 ribs) |
4 green onions, sliced (use all but the roots) |
8 tbs. chopped unsalted roasted peanuts |
1 tb. hoisin sauce |
4 c. cooked brown rice |
Directions:
1. Combine the oil and pepper flakes in a large skillet over medium heat. 2. Add the chicken and cook 2-3 minutes, stirring frequently. 3. Add the carrots, celery, green onions and peanuts and cook until the veggies start to soften. 4. Add the Hoisin sauce and heat through. 5. Serve over 1 C. brown rice per person. |
