The Only Way Fried Chicken |

This is my famous fried chicken. Crispy and juicy. Ingredients:
2 1/2 lbs frying chickens, cut into pieces |
2 eggs |
2 teaspoons water |
salt and pepper |
1 cup flour |
1/2 cup solid shortening (lard is even better) |
1/4 cup butter |
Directions:
1. Wash and pat the chicken dry. 2. Beat eggs and water together. 3. Put flour in paper bag. 4. Salt and pepper the chicken. 5. Dip chicken in egg. 6. Shake the chicken in the bag with flour. 7. Heat the shortning and butter until very hot, but not smoking. 8. Add chicken pieces. 9. Keep your burner on med hot; keep frying and turning until chicken juices run clear. 10. Drain on paper towels. |
