The No Recipe Beef Stew Recipe |

There really was no recipe to follow. Just a general, Mom would've done it this way kinda dish! She would've been proud! Ingredients:
1 small (1 - 1 1/2 lb.) sirloin tip roast |
1 (24 oz) pkg. frozen veggies for soups and stews (potatoes, celery, pearl onions and carrots) |
1/2 medium onion, chopped |
1/2 cup ketchup |
texas pete (or frank's) hot sauce, to taste (optional) |
salt and pepper to taste |
1 tablespoon olive oil for browning |
Directions:
1. Cut meat into bite size cubes 2. Salt and pepper 3. Heat oil in skillet and brown meat in batches to keep the skillet hot 4. Place meat in a 3 quart sauce pot with enough water to cover by 2 inches 5. Boil on medium high heat for 15 minutes 6. Add additional water as needed 7. Reduce heat and simmer for 1 1/2 hours 8. Add onions and frozen veggies, ketchup, additional salt and pepper if needed, and hot sauce the last 20 minutes of cook time 9. Cook until veggies are tender and potatoes are ready to fall apart 10. Most water will have been boiled away and stew will be a thick, rich broth 11. Serve with hot crusty French bread or hot buttermilk biscuits. |
