2 cups flour |
2 cups sugar |
1 teaspoon cinnamon |
1 teaspoon salt |
2 teaspoons baking soda |
1 cup oil |
4 eggs |
3 cups carrots, grated |
1 (8 ounce) package cream cheese |
1/2 cup butter, room temp (margarine is ok too) |
1 (1 lb) box confectioners' sugar |
1 cup pecans, chopped |
pecans, for decorating |
Directions:
1. Preheat oven to 350 degrees. 2. For the cake, mix all the dry ingredients together. 3. Add oil and mix well. 4. Add eggs 1 at a time, beating well after each addition. 5. Fold in carrots and mix well. 6. Pour batter into 3 (8-inch) cake pans that are lined with parchment paper. 7. Bake for approximately 18 - 35 minutes. Test using a toothpick. 8. Icing:. 9. Cream the cream cheese and butter together. 10. Add the confectioner's sugar and beat until smooth. 11. Fold in the pecans. 12. Spread on the cooled cakes. |
