These are so good! You start your week off right with these! *wink* Ingredients:
3 eggs |
1 c. applesauce |
1 1/2 c. granulated sugar |
1/4 c. butter or margarine |
2 tsp. vanilla extract |
1 c. zucchini, grated |
1 c. carrots, grated |
1 1/2 c. raisins |
1 c. pineapple, crushed and well drained |
3 c. all-purpose flour |
1 1/2 tsp. baking powder |
2 tsp. baking soda |
1/2 tsp. nutmeg |
1 1/2 tsp. cinnamon |
1/4 tsp. salt |
Directions:
1. Beat together eggs, applesauce, sugar, butter, and vanilla extract. 2. Stir in grated zucchini, carrots, raisins, and pineapple. 3. Mix together flour, baking powder, soda, nutmeg, cinnamon, and salt. 4. Stir flour mixture into egg / applesauce mixture just until dry ingredients are moist - do not over mix. 5. Spoon into 24 paper lined cupcake tins. 6. Bake at 350ºF for 25 - 35 minutes or until done. |
