The Martine Inn is a 24-room Victorian villa considered a spectacular place for a romantic getaway just 90 minutes south of San Francisco, originally built in the 1890s as a lavish private residence. These cookies are a lovely bite to serve with afternoon tea.
Ingredients:
1 cup sugar
1/2 cup butter (no substitutions)
1 egg, beaten
1 cup zucchini or 1 cup summer squash, grated
2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon ground cinnamon
1/2 teaspoon salt
1/2 teaspoon clove
1 cup raisins
1 cup walnuts, chopped
Directions:
1. Preheat oven to 375F and lightly grease cookie sheets.
2. In a large bowl, combine sugar and butter; beat well until fluffy.
3. Add egg and beat well.
4. Stir in zucchini.
5. In another bowl, sift dry ingredients together.
6. Add to butter mixture and blend well.
7. Stir in raisins and nuts.
8. Drop by teaspoonful onto prepared baking sheet about 2 apart.
9. Bake for 10 to 12 minutes or until golden brown.
10. Remove to a cooling rack.
11. When cool, store in a tightly covered container.
