The Lazy Cook's Spanish Rice |

Nothing could be easier (or tastier!) than this... for a variation, try browning the rice in a little butter before-hand and using a cast-iron pot... yummy! Ingredients:
1 cup uncooked white rice |
2 teaspoons minced garlic |
2 cups water |
1 (16 ounce) jar salsa |
Directions:
1. Combine the rice with the garlic in a large saucepan. 2. Pour water and salsa into the rice mixture. 3. Bring the water to a full boil and then reduce the temperature to simmer. 4. Simmer for 20 minutes or until the rice is tender. Fluff the rice when finished. |
