The Last Chili Recipe You'll Ever Need |

Chili the way it should be. It took me some time to get it the way I like it. It is not your typical hamburger based chili, but uses stew beef. Serve with some warmed up flour tortillas folded up. Ingredients:
1 1/2 lbs stewing beef or 1 1/2 lbs sirloin |
1 (10 ounce) can diced tomatoes |
1 chopped onion |
fresh jalapeno, seeded and chopped (heat varies by taste, i suggest starting with one each and add more as desired) |
fresh serranos, seeded and chopped (heat varies by taste, i suggest starting with one each and add more as desired) |
chopped garlic |
1 teaspoon cumin |
1 tablespoon chili powder |
1 (15 ounce) can pinto beans |
1 (15 ounce) can black beans |
monterey jack pepper cheese |
Directions:
1. On high heat sautee onions until just turning brown in a dutch oven or heavy pot. 2. Add and brown the meat. 3. Throw in the chilis and garlic and cook over medium heat for a few minutes. 4. Add crushed tomatoes and all the spices bring to a simmer. 5. Simmer for several hours, or until the beef begins to fall apart. 6. 30 minutes before serving add beans. 7. Sprinkle with cheese and serve with a warm flour tortilla or sprinkle with crushed corn chips. 8. If your chili is too spicy add a dollop of sour cream. |
