The Koffie Pot Inn Caramel Cake |

My family used to own the Koffie Pot Inn in Dunedin, New Zealand. My mother used to get up early to bake one of these every Friday. It was one of the most popular cakes on sale and it was rare for any to be left over. The recipe is taken from a handwritten note. I assume the baking time is 40-60 minutes. Ingredients:
4 ounces butter |
4 ounces sugar |
7 ounces flour |
1 egg, beaten |
1 tablespoon instant coffee |
1 teaspoon baking powder |
1/2 can sweetened condensed milk |
1 tablespoon brown sugar |
2 ounces butter |
vanilla essence |
1 tablespoon golden syrup |
1 tablespoon cornflour |
Directions:
1. Cake: Cream the butter and sugar. 2. Add the egg and coffee. 3. Add the sifted flour and baking powder last. 4. Grease and flour a standard springform tin and spread half of the mix in the bottom. 5. Caramel: Melt the ingredients slowly and carefully in a thick bottomed saucepan while constantly stirring. 6. Remove from heat and allow to cool. 7. Spread on top of the cake mixture in the tin. 8. From the remaining cake mixture, add dollops on top of the caramel. 9. Bake in a moderate 350 F/180 C oven. |
