The Home Ranch's Honey Pecan Chicken

Very tasty chicken, rolled in crushed pecans with a delicious, creamy honey bourbon sauce. Definitely company worthy! From L.A. Times food section many years ago.
Ingredients:
2 tablespoons butter
1 tablespoon minced shallot
1 cup fresh orange juice
1/4 cup bourbon
1 cup whipping cream
2 tablespoons honey
1 tablespoon cider vinegar
salt and pepper
1/4 cup flour
1 teaspoon minced fresh thyme
1/2 cup finely chopped pecans
salt and pepper
6 boneless skinless chicken breast halves
olive oil
Directions:
1. To make sauce, heat butter in medium saucepan.
2. Add shallots and cook over low heat 3 minutes or until tender, but not brown.
3. Add orange juice and bourbon, increase heat and continue cooking until liquid is reduced to 1/2 cup.
4. Add cream and reduce until slightly thickened.
5. Add honey, vinegar and season with salt and pepper.
6. If sauce is too thin, make a small amount of cornstarch and cold water slurry. Add it to sauce to thicken (only if needed).
7. To make chicken, mix flour, thyme, pecans, salt and pepper. Dredge chicken in flour mixture.
8. Heat small amount of olive oil in a large saute pan.
9. Add chicken and saute until golden brown.
10. Pour sauce onto each plate and place chicken breast in center. Serve addition sauce separately.
