The Hartness House Inn's Hazelnut Salmon

The Hartness House Inn, in picturesque Southern Vermont is located in historic Springfield in that state's renowned Green Mountains country.
Ingredients:
24 ounces salmon fillets
1 1/4 cups hazelnuts, finely chopped
3 -4 tablespoons butter
1/2 cup water
1 tablespoon shallot, chopped
1/2 cup frangelico or 1/2 cup hazelnut-flavored liqueur
2 cups heavy cream
1/4 teaspoon salt
1/8 teaspoon white pepper
Directions:
1. Preheat oven to 350°F.
2. Coat salmon fillets with hazelnuts, pressing in lightly.
3. Melt butter in saute pan and brown each piece of salmon about 30 seconds on each side or until golden.
4. Transfer to a 13 x 9 baking pan; add water.
5. Bake 20 to 25 minutes or until salmon is firm to the touch.
6. While the salmon is baking, combine shallots and liqueur in a saucepan.
7. Cook until reduced by half; add cream and cook for an additional 15 minutes or until mixture is reduced by half, stirring constantly.
8. Continue to cook until mixture begins to thicken; stir in salt and pepper.
9. To serve, ladle 1/4 cup of sauce onto each serving plate; place salmon fillets on sauce.
10. Garnish as desired and serve.
