One of my favorite comfort foods of all time is meatloaf, we have it for dinner, then have the leftovers for sandwiches for lunch the next day. This spinach packed meat loaf is a big winner in my books!! Ingredients:
1 lb lean ground beef |
1 lb ground pork |
1 cup bread, crumbs |
2 cups fresh spinach, chopped |
2 tablespoons parsley, chopped |
2 tablespoons basil, chopped |
2 large eggs |
1/4 cup beef stock |
1/4 cup ketchup |
2 teaspoons frank's hot sauce |
1 teaspoon worcestershire sauce |
1 roma tomato, finely chopped |
1 teaspoon salt |
1 teaspoon pepper |
Directions:
1. Place the beef, pork, bread crumbs, spinach and other greens in a large bowl, and mix lightly. 2. In a separate bowl, mix all the wet ingredients, tomatoes, pepper and salt. Pour this over the meat mixture, and mix until it comes together. 3. Form the mixture into a loaf on a sheet pan, and refrigerate for 1 hour. 4. Preheat oven to 350°F Bake for 1 hour and 15 minutes or until the internal temperature reaches 165°F Let stand for 5 minutes before serving. 5. EMBELLISHMENT: Some people like a glaze on meat loaf. If you are one of these people, simply brush the outside of the loaf with ketchup halfway through the cooking process. |
