The Farmers Wife Pecan Cookies |

Butter pecan cookies that freeze well. Ingredients:
1 1/4 cups plain all-purpose flour |
1/4 teaspoon baking soda |
1/8 teaspoon salt |
1 stick butter (no margarine) |
1 1/4 cups light brown sugar(firmly packed) |
1/2 teaspoon vanilla |
1 egg, beaten |
1 cup pecans, chopped medium fine |
36 pecan halves |
Directions:
1. Sift flour, baking soda and salt into a bowl and set aside. 2. Melt butter over low heat. 3. Remove from heat and stir in sugar using a wooden spoon. 4. Add vanilla, egg and finally the dry ingredients, stirring until smooth. 5. Stir in chopped pecans last. 6. Place rounded teaspoons of dough 2 apart on foil lined cookie sheets. 7. Gently press pecan half into each. 8. Bake for 12 - 14 minutes. 9. Cool on racks. 10. These freeze well. |
