This was out of the Not Your Mother's Slow Cooker Cookbook. The onions cook a very long time & end up delightfully brown and carmelized on the bottom.
Ingredients:
6 large yellow onions
3 tablespoons olive oil
14 ounces chicken broth
10 ounces beef broth
2 tablespoons marsala (optional) or 2 tablespoons red wine (optional)
Directions:
1. Peel and thinly slice the onions. Put in the slow cooker and toss with the olive oil. Cover and cook for 9-10 hours on high.
2. Add the broths and wine/marsala, if using; add no water or salt. Cover and continue to cook on high until hot, 15-30 minutes.
3. Serve with garlic bread or french bread topped with melted gruyere cheese.
