This is a great slow-cooker recipe that I found on another site and tweaked very slightly to my desires! Amazing quiche-like breakfast casserole with beautiful layering of meat, cheese and potatoes! Ingredients:
1 bag frozen southern-style potatoes (appr. 26 oz) |
1 lb. bacon |
1 lb. sausage |
3/4 lb cheddar cheese (you can use pepperjack for some kick) |
1 1/2 cups green onion diced |
1 large green bell pepper diced |
2-3 large jalapeno peppers, seeded and chopped |
1 dozen eggs |
1 tsp dry mustard powder |
Directions:
1. Cook bacon and sausage separately, drain and crumble them. 2. Place 1/3 of potatoes in crock pot 3. Cover with 1/3 of: onions, peppers, meat and cheese (in that order) 4. Repeat so that you end up with 3 layers in the crock pot 5. Beat eggs, mustard together and pour evenly over the top of everything 6. Sprinkle a little extra cheese on top (just for good measure) 7. Cook on LOW for 10-12 hours (more like 10) 8. The casserole should separate slightly from the side of the crock pot and be firm and sizzling when done (see photos) |
