The Best Sweet Potato Casserole |

This is my mom's infamous recipe. So sweet it might as well be considered dessert. Always made on Thanksgiving and Christmas and many times distributed! Hope you enjoy. Ingredients:
5 large sweet potatoes, cooked |
2 1/2 cups butter, melted |
1 cup granulated sugar |
2 eggs, beaten |
1 teaspoon vanilla |
1 cup shredded coconut |
1 cup brown sugar |
1 cup pecans, chopped |
2 tablespoons flour |
Directions:
1. Lightly rub 9x13 cake pan or casserole dish with butter. In large mixing bowl, mash cooked sweet potatoes. Add 1.5 cups melted butter, granulated sugar, eggs, and vanilla- beat until smooth. Pour into prepared casserole dish. In medium bowl, mix coconut, brown sugar, remaining melted butter, pecans and flour. Spread topping over potato mixture and bake uncovered 20-30 minutes at 350 degrees or until topping is brown. |
