This recipe is from a past co-worker and is a huge hit with kids! Don't be put off by the Ritz crackers crust....the combination of sweet and salt is a winner. If you don't like that idea you could easily substitue Nilla Wafers ( which my husband loves! Read more !) Ingredients:
68 ritz crackers (or nilla wafers if you don't want the saltiness) |
4 teaspoons sugar |
1/2 cup butter or margarine |
2 cups nonfat milk |
2 small boxes instant vanilla pudding |
1 quart vanilla ice cream, slightly softened |
8 ounces of cool whip or any whipped topping |
Directions:
1. Smash crackers (or cookies) until like dust. Save aside 1/4 cup for later 2. Add melted butter and sugar to crackers. Layer the bottom of a 9x13 pan with the cracker mix 3. Combine milk with pudding. Add ice cream. Whip this mixture a lot. 4. Add mixture to top of cracker crust 5. Cool in regrigerator 15 minutes then add Cool Whip on top 6. Sprinkle top with remaining crushed crackers. 7. Refrigerate 2 to 3 hours before serving |
