This is so simple to make and really tasty. Its also quite easy to add more or less ingredients depending on how many you are cooking for! Ingredients:
1 butternut pumpkin |
7 -10 potatoes (equal in volume to the amount of pumpkin you use) |
curry powder |
paprika |
oil |
Directions:
1. Peel and dice the potatoes and pumpkin. Fry these in enough spices to color everything nicely - you can add more later to taste. 2. Put contents into a large pot and fill with water until it covers everything, and let simmer for approximately an hour, or until vegetables are soft enough to mash. 3. It is better for a smoother consistency to use a hand blender, otherwise just mash with a potato masher until everything is as fine as possible. Add salt, pepper, and other spices to taste. You can also try using Coriander. |
