1 3/4 cups all purpose flour |
1 1/4 cups sugar |
1 tbsp baking powder |
1/4 tsp salt |
1 tsp cinnamon |
1/2 tsp nutmeg |
1/2 tsp ginger |
1/4 tsp allspice |
1/8 tsp ground cloves |
1 cup pumpkin |
1/2 cup soy milk |
1/2 cup vegetable oil |
2 tbsp molasses |
Directions:
1. Dry mix: flour, sugar, baking powder, salt, spices 2. Wet mix: pumpkin, soy milk, oil, molasses 3. Mix wet into dry, scoop into 12 muffin tins and bake for 18-20 minutes at 400 degrees. |
