Found this recipe in a Farm Journal book and has become a staple. This recipe is easy and they disappear quickly. You also will be asked to make them all the time!! Ingredients:
1 cup soft butter |
1 cup firmly packed brown sugar |
1 cup white sugar |
1 tsp vanilla |
2 eggs |
1-1/2 cup flour |
1 tsp salt |
1 tsp baking soda |
3 cups old fashioned oatmeal (not quick cook) |
1-1/2 to 2 cups raisins |
Directions:
1. Preheat oven to 350 2. Grease or spray cooking sheets generously 3. Cream butter and 2 sugars until fluffy 4. Stir in vanilla then add eggs one at a time beating well after each add 5. Sift flour, salt & baking soda together 6. Add to creamed mixture 7. Stir in oatmeal and raisins (may need to mix by hand, I do) 8. Drop by rounded teaspoons 2 apart ( do not crowd they do spread) on to greased sheets 9. Bake for 10-15 minutes only DO NOT OVERBAKE, (they will burn and are too crispy) 10. Cool 1 minute on sheet before removing to racks to cool completely 11. ENJOY!! |
