The Best Oatmeal Raisin Cookie You Never Had |

So I was looking for a good oatmeal raisin cookie recipe but no recipe seemed to fit the bill. So I decided to create my own recipe by looking at about a dozen other recipes crossing my fingers hoping that all the measurments would yeild an edible cookie. OMG!!! I was so lucky. These bad boys are crisp chewy and if I do say so myself THE BEST OATMEAL RAISIN COOKIE YOU NEVER HAD. Please enjoy. This is a huge batch but I do not think that will be a problem once you try them. Ingredients:
1 1/2 cups unsalted butter, softened |
1 (8 ounce) cream cheese, softened |
2 cups brown sugar |
1 1/2 cups white sugar |
2 teaspoons vanilla |
1/4 teaspoon maple extract |
3 eggs |
3 cups flour |
1 1/2 teaspoons baking soda |
1/2 teaspoon baking powder |
1 teaspoon salt |
1 teaspoon cinnamon |
2 cups raisins |
3 cups quick-cooking oats |
1 1/2 cups sweetened flaked coconut |
1 1/2 cups crisp rice cereal |
1 1/4 cups pecans, chopped |
3/4 cup toffee pieces |
Directions:
1. In a mixing bowl, cream butter and sugars. Add egg, vanilla and maple; mix well. 2. Combine flour, baking soda, baking powder and salt; add to creamed mixture and mix until flour is incorporated. 3. Stir in oats, then add Rice Krispies, coconut, pecans, toffee and raisins. Using a small cookie scoop evenly space a dozen cookies on parchment paper lined cookie sheets. 4. Bake at 370 degrees for approximately 9-12 minutes or until lightly browned. Cool on the cookie sheet. |
