I have been making this macaroni salad for years, (don't remember where I got it from) and am not allowed to go to any family functions without it. My new husband even requested that I make it for Thanksgiving! Hope you enjoy it as much as we do. I usually triple the recipe. Ingredients:
5 cups elbow macaroni, cooked and drained |
1 cup miracle whip (i usually add more) |
1 cup chopped red bell pepper |
1 cup chopped cucumber |
1 (8 ounce) package cheddar cheese, cubed (i sometimes use colby/jack) |
1/2 cup chopped green onion |
1/2 teaspoon salt |
1/2 teaspoon fresh ground pepper |
Directions:
1. Mix ingredients until well blended; refrigerate. 2. I usually make this a day ahead so that the flavors meld. 3. Before serving, i usually add more Miracle Whip. |
