The Best Huevos Rancheros

Coming from a place with a huge population of Hispanics I learned to cook and love food from south of the border. This is how I was taught to make Huevos Rancheros. Cheers, -Brian S. Crist II
Ingredients:
10 corn tortillas
10 large huevos ; (eggs)
olive oil
'''salsa
2 large ripened tomatoes finely chopped, or 15 ounce can of fire roasted tomatoes
1/2 cup chopped onion
1 diced anaheim pepper
2 tablespoons of chopped cilantro
chili powder and ground cumin to taste, (a dash or two)

avocado slices
refried beans
Directions:
1. ~~~Salsa~~~
2. 1) Sauté onions in olive oil until translucent
3. 2) Add in tomatoes, if using canned tomatoes shred with fingers as you add them
4. 3) Add in Anaheim pepper, cilantro, chili powder and cumin
5. 4) Heat until you see bubbles forming then reduce heat to low and stir occasionally while you prepare other ingredients
6. 6) Heat oven to lowest setting
7. 7) Layer the bottom of a pan in olive oil and fry the tortillas until crisp but still malleable place on hot plate in oven and continue
8. 8) Fry eggs in olive oil (I suggest leaving the yolk runny it makes it 10 times better, but if you choose flip the eggs and fry until yolks are firm)
9. 9) Take a plate put a small amount of salsa on bottom, place tortilla and then fried egg of that and top with more salsa and cilantro if desired
10. If you have them, spread refried beans on to the tortillas before placing the egg on top, then place the avocado on top of that.
11. Personally I'm a two egg two tortilla smothered in salsa person, but these are so good you will most likely want more. Enjoy!
