I actually saw this type of corn on Food TV's the Best Thing I Ever Ate . I put together my own spice mix but the mayo and grated cheese were from the show. This is so good. You won't be able to eat just one. Ingredients:
12 ears fresh corn on the cob |
1 cup mayonnaise |
3 cups freshly grated romano or asiago cheese |
1/4 cup olive oil |
1 t ground cumin |
1/2 teas. garlic powder |
1 teas ancho chile powder + 1 teas ancho chile powder |
1 t kosher salt |
Directions:
1. Peel the husks back but don't remove. They will act like a handle for grilling and eating. 2. Remove the silk 3. Lightly coat each ear with olive oil 4. Combine the cumin, salt , ancho chile, and garlic powder 5. Light season with the spice mixture 6. Grill the corn over a hot charcoal or gas grill The kernels should pick upo a slight char. 7. Remove the corn from the gtill 8. Lightly coat each ear with mayonnaise 9. Roll in the grated Romano/Asiago cheese 10. Sprinkle with ancho chile powder 11. Serve with napkins |
