I love making this dessert, I think it is the glaze that takes it to another level. Ingredients:
2 cups flour |
1 1/2 teaspoons baking powder |
1/4 teaspoon salt |
1/3 cup vegetable oil |
3/4 cup sugar |
1 teaspoon vanilla |
1 egg, plus enough milk to make 1/3 cup |
16 ounces cream cheese, softened |
1 teaspoon vanilla |
3/4 cup powdered sugar |
1/2 cup water |
1/2 cup sugar |
1/2 cup orange juice |
1 1/2 tablespoons cornstarch |
your choice mixed fruit |
Directions:
1. Mix flour, powder, salt , oil, 3/4 cup sugar, 1 tsp vanilla, and egg/milk mixture together. Press into greased and floured 9 x 13 pan. Bake at 350 degrees for 10 minutes. Cool. 2. Beat together cream cheese, powdered sugar and 1 tsp vanilla. Spread over cooled crust. 3. Top with your choices of fruit. My favorite is a large mixture of red and green grapes, fresh cherries, kiwi, strawberries, blueberries, cantaloupe and honeydew. 4. Bring water, 1/2 cup sugar, orange juice and cornstarch to a boil over medium heat. Cool for a few minutes and then pour over fruit. Chill until ready to serve. |
