The Best Ever Potato Salad |

I altered a few recipes and came up with this since my boyfriend and I love that sour dill taste more than a sweet potato salad. Ingredients:
1/2 cup mayonnaise |
3 tablespoons dijon mustard |
1 garlic clove, minced |
1/2 teaspoon salt |
1/4 teaspoon black pepper |
4 russet potatoes, peeled cooked and cubed |
3/4 cup sliced onion |
1/2 cup bell pepper |
1 teaspoon celery seed |
2 hard-boiled eggs |
1 teaspoon mustard |
3 dill pickles, cut |
1 tablespoon pickle juice |
Directions:
1. Mix all ingredients except mayonnaise, eggs, and potatoes in a large bowl. 2. Carefully add potatoes and eggs, stirring gently so as to not “mush” the ingredients. 3. Slowly add mayonnaise, add more if desired texture is more creamy. 4. Let chill and serve! |
