The Best Darn Chicken Soup Ever |

This is flavorful, spicy and moist chicken soup. Far from the chicken soup I grew up with which was bland and dry. It has a thin potato base which is comforting. Ingredients:
60 ounces chicken broth |
6 chicken legs |
2 large idaho potatoes (peeled and cubed) |
4 large mushrooms (cut thin) |
1 large onion (cut thin) |
1/8 cup diced scallion |
1/8 cup fresh cilantro |
1 tablespoon chili oil |
1 tablespoon salt |
1 teaspoon red pepper |
1 dash basil |
1 dash oregano |
1 dash black pepper |
Directions:
1. Puree potatoes in blender with chicken broth. 2. Pour broth into large pot. 3. Place all remaining ingridients in pot. 4. Cook until boiling. 5. Let boil for five minutes. 6. Place heat on low for 1/5- 2 hours. 7. Enjoy. |
