The Best Chocolate Chip Pumpkin Bread |

This recipe dates back to the preschool/playgroup days, when we got the recipe from Benjamin's mom. For an entire year of preschool, when it was my daughter's turn to take snack, this is what she wanted. And we still love it! Ingredients:
1 1/2 cups all-purpose flour |
1 1/2 cups whole wheat flour |
1 teaspoon cinnamon |
1 teaspoon salt |
1 teaspoon baking soda |
4 eggs |
2 cups sugar |
2 cups canned pumpkin |
1/2 cup vegetable oil |
3/4 cup applesauce |
1 1/2 cups chocolate chips |
Directions:
1. Preheat oven to 350. 2. In a large bowl, combine flours, cinnamon, salt and baking soda. 3. In another bowl, beat eggs, sugar, pumpkin, oil and applesauce. Stir into dry ingredients just until moistened. Fold in chocolate chips. 4. Pour into 2 greased 8 loaf pans. 5. Bake 60-70 minutes Allow to cool 10 mins before removing from pan. |
