The Best Calamari Salad

An easy inexpensive side dish goes great with grilled foods and grilled bread for the juice !!!!
Ingredients:
4 lbs calamari, cleaned and skinned
1/2 cup diced red onion
2 fresh jalapenos, minced seeds and veins removed
1 cup red bell pepper, diced seeds and veins removed
1 cucumber, peeled seeds removed diced
1/2 cup celery, diced
1/4 cup fresh cilantro, diced
salt and pepper
1/4 cup fresh lemon juice
3 tablespoons champagne vinegar
1/2 cup extra virgin olive oil
2 pressed garlic cloves
Directions:
1. Clean calamari remove the fins and skin.
2. If you wish to use the tenacles cut them off above the eyes remove the hard center.
3. Cut the calamari into small rings.
4. Cook the calamari in boiling salted water for approx 1 minute drain and rinse under cold water.
5. Put into serving bowl add all the chopped ingredients stir to combine.
6. In a small bowl add vinegar and lemon juice wish in olive oil to make an emulsion
7. add to salad and stir to combine.
8. Refrigerate for several hours before serving.
