The Best Broccoli Salad

Concentrate on the raw broccoli and how good it is for you and you can justify all the bacon, cheese and mayo. Yeah, right. Worth every calorie!
Ingredients:
2 bunches broccoli (not stalks, bunches!) - cut into small florets
1 pound bacon, cooked crisp and crumbled
1/4 small red onion, chopped
12 ounces mozzarella cheese, shredded
1 cup mayonnaise
1/2 cup sugar
2 tablespoons white vinegar
Directions:
1. Toss broccoli, bacon, onion and cheese together. Mix dressing ingredients well and pour over salad. Refrigerate 1 hour before serving.
2. NOTE: You won't think there is enough dressing. It will seem dry at first. After the hour, moisture from the broccoli will make the salad JUST the right consistency. Oh, and NO, there isn't any salt in this. Not necessary with all the cheese and bacon.
