16 each new potatoes, cooked, skins left intact |
1/2 cup lobster meat, minced |
1/4 cup sour cream |
1 teaspoon horseradish |
2 tablespoons butter, softened |
1/4 teaspoon salt |
1/4 teaspoon black pepper |
2 tablespoons chives, minced |
as needed chives, for garnish |
Directions:
1. Cool the potatoes well. If necessary to make them stay upright, shave a tiny sliver from the bottom. With a grapefruit spoon scoop a well in the top of each about the size of a thimble. Reserve this potato for another use. Mix all other ingredients. Fill each well with this mixture. Cut extra chives into approximately 3/4 lengths, and place two in an x pattern on each potato for garnish. |
