Anyone remember this mystery pie from the 80s? No one will guess the real mystery ingredient. Wasn't there also a Mock Apple Pie made with Ritz crackers??? Ingredients:
4 eggs, at room temperature |
1 cup sugar |
1 3/4 tsp baking powder |
1/4 tsp vanilla |
2 cups saltines, coarsely broken |
1 cup chopped pecans, divided |
1 1/2 to 2 cups whipped cream or cool whip |
Directions:
1. Whip egg whites on medium speed until soft peaks form. 2. Continue whipping while gradually adding sugar and baking powder. Continue to whip until very stiff peaks form and all sugar is dissolved. 3. Add vanilla and mix thoroughly. 4. Add crackers and 3/4 cup pecans; gently fold in by hand. Pour into a greased 9 inch pie pan and bake at 325 degrees for 1 hr. 5. Remove from oven and cool upside down. 6. When thoroughly cooled, top with whipped cream and sprinkle with remaining pecans. |
