This was a hit at our Thanksgiving dinner. Everyone wanted more. The recipe was in my mother's collection but I dont remember her ever making it. It will now be a Thanksgiving tradition in our home. Enjoy. Ingredients:
1 15oz. can pumpkin |
1 can evaporated milk |
1 cup sugar |
1/2 tsp cinnamon |
1/2 tsp nutmeg |
3 eggs |
1 box yellow butter flavored cake mix (duncan hines) |
1 cup pecan pieces |
2 sticks melted butter |
small container cool wip (2 cups) |
8oz. cream cheese |
1 cup powdered sugar |
Directions:
1. Mix together pumpkin and milk. 2. Add sugar, cinnamon, nutmeg, and eggs. Stir well. 3. Pour into greased 9x13 pan. 4. Crumble cake mix evenly over pumpkin mixture. 5. Sprinke with nuts (save some for the top) 6. Pour butter evenly on top. 7. Bake 50-60 minutes at 350. 8. Once cool, cover with frosting and sprinkle with nuts. 9. Chill until ready to serve. 10. Frosting recipe: 11. Mix Cool Wip, cream cheese and powdered sugar with hand mixer until smooth. 12. Enjoy. |
