A nice side dish for Thanksgiving or Christmas. Ingredients:
3 large sweet potatoes or 3 large yams |
1/4 cup butter |
1/2 cup brown sugar |
6 -8 ounces fresh cranberries |
1/2 cup golden raisin |
Directions:
1. Preheat oven to 400º. 2. Peel and quarter sweet potatoes lengthwise. Place in greased 12x9 glass dish. 3. Top with butter and brown sugar. Bake at 400º for 30 minutes. 4. Add cranberries and raisins, reducing heat to 350º. Continue baking for 1 hour or until potatoes are tender. 5. Top with coarsely chopped pecans if desired. |
