Thanksgiving Honey Apple Pumpkin Soup

Taken from the Moderation Diet Cookbook. This just oozes Fall and Thanksgiving dinner. It is on my short list of holiday recipes to try this year.
Ingredients:
3 cups chicken broth
1 onion, minced (small)
2 apples, peeled, cored and grated (medium)
2 tablespoons honey
2 cups pumpkin puree (canned)
1 cup apple juice
1/3 teaspoon pumpkin pie spice
1/4 cup half-and-half
Directions:
1. In a Dutch oven casserole, simmer together first 3 ingredients until onion and apple are soft. (This can be pureed in a food processor at this point, but it is not essential). Stir in the remaining ingredients and heat through. Serve with a teaspoon of low fat sour cream on top and a sprinkling of cinnamon.
