Thanksgiving Honey Apple Pumpkin Soup |

Taken from the Moderation Diet Cookbook. This just oozes Fall and Thanksgiving dinner. It is on my short list of holiday recipes to try this year. Ingredients:
3 cups chicken broth |
1 onion, minced (small) |
2 apples, peeled, cored and grated (medium) |
2 tablespoons honey |
2 cups pumpkin puree (canned) |
1 cup apple juice |
1/3 teaspoon pumpkin pie spice |
1/4 cup half-and-half |
Directions:
1. In a Dutch oven casserole, simmer together first 3 ingredients until onion and apple are soft. (This can be pureed in a food processor at this point, but it is not essential). Stir in the remaining ingredients and heat through. Serve with a teaspoon of low fat sour cream on top and a sprinkling of cinnamon. |
