Simple and delicious Thai grilled chicken thigh skewers. Ingredients:
1/4 c green curry paste |
1/4 c coconut milk |
1 lb. boneless,skinless chicken thighs-cut in 24 1 pieces |
8 scallions-cut firm green portion in 24 1 lengths. |
vegetable oil |
Directions:
1. In medium bowl, combine curry paste,coconut milk,add chicken pieces. Cover and refrigerate 4 hours to overnight. 2. Preheat grill to med-high. Thread 2 chicken pieces and 2 scallion greens alternately onto each of twelve 6' skewers,brush with vegetable oil. Grill,turning once,for 10 mins. |
