Thai Sweet Chili Dipping Sauce |

Ingredients:
8 thai red chili peppers, seeded |
4 cloves garlic, crushed |
1 shallot, minced |
1 (28 ounce) can tomatoes |
2/3 cup sugar |
2/3 cup rice vinegar |
2 teaspoons salt |
Directions:
1. Combine all ingredients in a small saucepan and bring to a boil. 2. Reduce heat to very low, cover and simmer for 45 minutes to 1 hour, or until sauce is thickened. 3. Taste and adjust seasonings as necessary. 4. Transfer to small dipping dishes. |
