This can be made in a crock pot as well, cook on high for 1 hr then reduce to low for 5 hours. Ingredients:
4 lbs pork ribs |
11 1/2 ounces frozen pineapple-orange-apple juice concentrate, thawed |
3/4 cup soy sauce |
1/4 cup creamy peanut butter |
1/4 cup cilantro, minced |
2 tablespoons fresh ginger, minced |
2 garlic cloves, minced |
2 teaspoons brown sugar |
Directions:
1. Place ribs in ziplock bag or large shallow dish. 2. Combine remaining ingredients with a whisk in a seperate bowl, reserving 3/4 c for serving and dump the rest into the baggie or dish with the ribs. Cover and chill 8 hours or overnight, turning occasionally. 3. Place ribs in a pan and cover with foil; bake for 3 hrs at 275degrees and DO NOT peek! 4. Finally, you can either grill for 10 min on each side at medium heat on an open grill or broil for about 5 minutes on each side to brown the ribs. 5. Warm the reserved 3/4 c marinade and serve on the side. |
