Thai-style Cucumber Salad |

Delicious crunchy salad, always a hit! Ingredients:
1/3 cup distilled white vinegar |
1/3 cup sugar |
1/2 tsp red pepper flakes |
1/2 tsp thai or vietnamese fish sauce |
1/2 tsp salt |
2 lbs cucumbers, seeded, and chopped into 1/2-inch chunks |
1/4 cup red onion, finely chopped |
2 tbsp fresh cilantro, chopped |
2 tbsp fresh mint, chopped |
1/4 cup roasted peanuts |
Directions:
1. In large bowl, mix vinegar, sugar, pepper flakes, fish sauce and salt. If you are particularly sensitive to salt, you can omit as the fish sauce and peanuts will give it enough salt taste. Stir until sugar is dissolved. 2. Add cucumber, onion, cilantro and mint; toss until well covered. Refrigerate, covered, for 1 hour. 3. Before serving, add peanuts and toss again. |
