Thai -Style Chicken With Coriander Mango Salsa |

From Fast Chicken / The Hawthorn Series Coriander/Cilantro Ingredients:
2 tablespoons oil |
1 garlic clove, chopped |
1 teaspoon ginger, grated |
500 g chicken tenderloins, sliced |
1 tablespoon light soy sauce |
1/2 teaspoon light brown sugar or 1/2 teaspoon palm sugar |
2 tablespoons sweet chili sauce |
2 tablespoons fish sauce |
2 tablespoons lime juice |
150 g hokkien noodles, fresh |
1/2 bunch chinese broccoli |
1 small red onion, finely chopped |
1/4 cup coriander |
200 g mangoes, finely diced |
2 tablespoons red wine vinegar |
Directions:
1. Cook the garlic and ginger for 1 minute. 2. Add the chicken and brown for 4-5 minutes. 3. Add the sugar, soy,chilli and fish sauces and lime juice. Simmer until the chicken is cooked. 4. Cook the noodles in boiling water until tender. 5. Drain, add to the pan ,along with the broccoli, and toss well. 6. Serve with the Coriander Mango Salsa: combine all ingredients in a bowl and mix well. |
